Fegatini, or liver patè,
is a creamy and tasty spread
that dates back in time and has rural origins:
chicken livers are cooked for a long time,
together with wine, fresh herbs, oil and vegetables,
creating an appetizing and savoury patè.
This recipe holds an important lesson: “nothing goes wasted”.
Long considered to be a dish for peasant families due
to being made from what essentially are leftovers,
this is in fact a jewel in the Tuscan culinary crown.
