Like most dishes of the Tuscan culinary tradition, PAPPA AL POMODORO has humble and ancient origins: to recover the old bread and not throw it away, the less well-off farmers found this delicious method about 300 years ago. At the beginning of the 1900s this dish became famous throughout Italy thanks to the "Giornalino di Gian Burrasca".
Then, in the 1970s, the newspaper became a television series and you know what was the symbolic song of the series? Rita Pavone's famous "VIVA LA PAPPA AL POMODORO". From then on, there is no Italian who does not know this dish.
His recipe is of a unique simplicity: all that is done is to cook the bread - strictly Tuscan - in a pan with abundant vegetable broth, tomato, salt and pepper.
Once the mixture has become creamy, add basil and EVO oil: you're done.
It is a very versatile dish: you can enjoy both hot and cold, combining it if necessary with white or red wine. It is excellent as a summer starter enjoyed cold, but also as a warm tasted side dish: in short, it is suitable for any occasion.
