FINOCCHIONA IGP ( SALAMI WITH FENNEL SEEDS) -200 GR-
Finocchiona is a pure pork salami with the addition of fennel seeds, garlic and pepper.
The lean pork meat is cooled and ground to obtain the dough and then it is bagged and tied.
It continues with the drying and seasoning that are carried out at controlled temperature and humidity.
The color goes from the red of the lean meat to the pinkish-white of the fat parts.
The aroma is pleasant and characteristic due to the strong aroma of fennel and light garlic.
The taste is fresh and appetizing.
A little bit of history.
Finocchiona IGP is indissolubly linked to Tuscany.
Its history dates back to the Middle Ages, where fennel seeds (hence the name finocchiona) were added to the meat mixture, instead of the rarest and most expensive pepper, because they can be easily found in the fields.
This sausage already in the fifteenth century was immediately appreciated by both the common population and the nobles and it is said that Machiavelli was also a great consumer.
The testimonies that the finocchiona was already appreciated in historical times confirms the fact that already in 1878 it is mentioned in the vocabulary of the spoken language of the time until arriving in the most important Italian encyclopedia, where the finocchiona is defined "TYPICAL TUSCAN SALAMI".
Finocchiona IGP is characterized by its soft and fresh dough.
It goes well with TUSCAN bread, also excellent with focacce, accompanied by in oils, cooked vegetables and PECORINO TOSCANO cheese and local red wines.
