PECORINO PASCOLI DI MAREMMA (sheep's cheese) -250/350 GR-
This Pecorino is produced in the Maremma Tuscany, where the flock grazes and gives a special milk with which this cheese is produced.
Raw milk pecorino with rounded shape.
The paste, processed at lower temperatures, to enhance the aromas of milk, is white with a sweet and delicate taste and its texture is soft and elastic.
Its maturation is at least 60 days.
Externally it is treated with tomato paste that gives a reddish color to the crust.
It’s produced throughout the year, although the best time of year is in the spring when the flock feeds on new grass.
