We wanted to find the perfect Spaghetti for you, made just like they used to, and in the end… we found them! Our Spaghetti still follow the original preparation process, that dates back over 50 years. We are talking about the bronze-drawing that makes their surface rough and porous, and slow drying (up to 50 hours!) at low temperatures, for easily digestible spaghetti with a perfect consistency. The specialty is the shape: they are short noodle strips, more or less 1.5 cm long, twisted by hand, and slowly dried. This particular shape gave it its name. In fact, "Strozzapreti" comes from the verb "strozzare" (gag): turning the noodle around itself actually seems to choke it!
