Like many soups, the Ribollita is of simple origin; when you consider that the soup was eaten in the Middle Ages by Tuscan servants who had the bread that the Florentine nobles threw away boiled with the vegetables at their disposal. This way, which arose for them so as not to go hungry, gave origin to the famous Ribollita Toscana; a healthy, tasty and nutritious soup. Our Ribollita is made with bread, palm cabbage, tomatoes, onion, beans, potatoes, carrots, celery and zucchini, and flavored with EVO oil, salt and pepper. A tip to enjoy it at its best? Eat Pane Crogiato (our Tuscan toasted bread), smeared with garlic and a dash of olive oil, and drink a good glass of CHIANTI!
